This limited-edition Irish whiskey matured for over five decades, first in ex-bourbon American oak barrels. It was then decanted into a bespoke cask made by Master Cooper Ger Buckley and his team. The barrel was made using wood from the five previously released Silent Distillery expressions.

According to Midleton, the result is a complex, balanced whiskey with flavors like fresh fruit, dried tobacco leaves, antique oak, and more.

“Midleton Very Rare Silent Distillery Collection Chapter Six is a whiskey whose excellence is shaped by so many extraordinary factors. From the characteristics of the now incredibly rare single pot still distillate style created back in Old Midleton to the 50-year maturation process under the care of my predecessors and I to a one-of-a-kind final marrying, this whiskey has been looked after like no other,” said Master Distiller Kevin O’Gorman.

“Max, Barry, Brian, Ger, and I, alongside the Midleton Distillery family past and present, have been a team over many decades, protecting and nurturing this liquid to achieve its peak. While there is a sense of sadness as the Old Midleton Distillery and the Silent Distillery Collection reach a close, I know they would all agree that it has been an extraordinary privilege to be part of the creation process.”

Bib & Tucker just launched a bourbon finished with coffee beans
To say Bib & Tucker's new bourbon is unique is an understatement
Bib & Tucker

We’ve seen some interesting maturation techniques and finishing barrels in the whiskey world. But we’ve never seen anything like the newest expression from Bib & Tucker. That’s because, instead of finishing in a unique vessel like an ex-bourbon or even ex-port casks, Bib & Tucker Gold Roast Bourbon was finished using coffee beans (yes, you read that right).
Bib & Tucker Gold Roast Bourbon

This aptly named whiskey begins as a Tennessee bourbon matured for at least six years in new American oak barrels before being filtered using the Lincoln County process. It’s then infused by cold steeping with custom-roasted Honduras-grown Arabica beans from Tennessee-based Muletown Coffee Roasters.

Whiskey Highball

With the arrival of summer, you might feel like it’s time to put your darker spirits like bourbon, rye whiskey, and single malt Scotch whisky back on the shelf in favor of lighter spirits like vodka, rum, tequila, and gin. But we think that’s a shame. The warmer months aren’t a time to banish your favorite whiskey. There are countless whiskey-centric seasonal cocktails. This includes the timeless Whiskey Highball.

In my years of writing about alcohol, I’ve found that in the pantheon of refreshing mixed drinks, there might not be a more flavorful, refreshing summer potable than the Whiskey Highball. As soon as the weather hits 80 degrees (sometimes even 70 degrees), you can bet I’ll be mixing up this classic highball drink.
